May is right around the corner. That means sunshine and Memorial Day barbecues. So, thinking ahead, I’ve got a really fun single serve for you. They’re strawberry jello shots. Now how fun is that? And, depending on your preference, you can make them with or without alcohol. It’s an umbrella drink in a tiny little strawberry cup; like a little bit of sunshine in the palm of your hand. Mmmm.

The basic recipe calls for hollowing out your strawberries. A melon spoon works well for this. You’ll also want to cut a very shallow portion off the bottom so that your strawberries can stand upright. Make your jello, with or without spirits. Pour the jello into the hollowed out strawberries, then let them set in the refrigerator. After they’re set you can dip the tops in lime juice and then in sugar.
